On June 12, 2025, a select group of nine guests gathered at the intimate and exclusive Di La Dining, an undisclosed location known for its curated culinary experiences. The occasion? A masterclass that would mark a milestone in Canadian spirits culture: the first premium mezcal masterclass in the country’s history.

The evening was a journey, one that celebrated the depth, ritual, and craft of mezcal. Guests were guided through a curated selection of premium varietals, each sip layered with complexity and tradition.
The experience reached a new height thanks to the inspired culinary pairing by Executive Chef Laura Panarese, whose creations elevated each pour to a sensory dialogue. Her dishes, thoughtful and bold, played in perfect harmony with the smoky elegance of the mezcal.
